Grape Bruschetta Crackers

This grape twist on a classic tomato bruschetta is both fresh and flavourful, and pairs beautifully with rich Cracker Barrel Old Cheddar and buttery Ritz crackers.

Ingredients

  • 2 cups (750 mL) seedless green grapes, chopped
  • 2 tbsp (30 mL) finely chopped red onion
  • 2 tbsp (30 mL) thinly sliced fresh basil
  • 1/4 tsp (2 mL) salt
  • 1/4 tsp (2 mL) granulated sugar
  • 150 g Cracker Barrel Old Cheddar Cheese
  • 36 Ritz Original Crackers
  • 1 tbsp (15 mL) chopped toasted walnuts

Directions

  1. In medium bowl, stir together grapes, onion, basil, salt and sugar. Let stand for 10 minutes.
  2. Meanwhile, cut cheese into very thin slices widthwise, then in half lengthwise.
  3. Top each cracker with piece of cheese and grape bruschetta.
  4. Arrange on serving platter and garnish with walnuts.

Tips:

Substitute Ritz Original Crackers with Triscuit Original Crackers.

If preferred, arrange all crackers, cheese and grape bruschetta on a platter as an appetizer tray instead of arranging individual canapés.

Garnish bruschetta crackers with drizzle of balsamic glaze if desired.
