Orzo and Feta Salad
With lovely Mediterranean flavours, this salad with orzo, chickpeas and feta cheese can be served as a main or side dish.

Ingredients
- 1 cup (250 mL) Cracker Barrel Crumbled Feta
- 8 oz (250 g) orzo
- 1/2 cup (125 mL) olive oil
- 1/4 cup (60 mL) lemon juice
- 2 tbsp (30 mL) finely chopped fresh mint
- 2 tbsp (30 mL) finely chopped fresh dill
- 1 tbsp (15 mL) Dijon mustard
- 2 cloves garlic, minced
- 1/2 tsp (2 mL) each salt and pepper
- 1 can (19 oz/560 mL) chickpeas, drained and rinsed
- 2 cups (500 mL) arugula
- 2 cups (500 mL) halved cherry tomatoes
- 1 cup (250 mL) diced cucumber
- 3/4 cup (175 mL) pitted Kalamata olives, halved
- 1/4 red onion, thinly sliced
Directions
- Cook orzo according to package directions. Drain and rinse with cold water.
- Meanwhile, whisk together oil, lemon juice, mint, dill, mustard, garlic, salt and pepper.
- In large bowl, toss together orzo, cheese, chickpeas, arugula, tomatoes, cucumber, olives and red onion.
Tips
For gluten-free options, substitute a gluten-free grain medley, brown rice or quinoa for orzo.
Substitute regular Feta for Cracker Barrel Herb & Garlic Feta or Cracker Barrel Light Feta.
